Supper For Someone In Need

Bev has a friend who is working full time and looking after a son who was very seriously injured in a car wreak so Bev has offered to make supper for her family once a week, which began this week.  Since the weather had turned cold and rainy, we thought soup would be just the ticket and we chose White Chili using the Calhoun’s (local restaurant chain) recipe from Food,com.  


Since we wanted to eat it for supper as well, we doubled the recipe and made a couple of adjustments to get the one shown below.

White Chicken ChileAdapted from Food.com

Ingredients:
3 lb.             Chicken breasts boneless and skinless (this is more than orig. recipe)
2 cup           Diced yellow onions
2 tsp            Oregano
2 tbsp          Olive oil
8 cups         Water (we omitted for a heartier soup)
8 cup           Chicken broth
2 tsp.           Granulated garlic
2 tsp.           Ground cumin
1 tbsp          Chopped fresh cilantro
1 cup           Canned chopped green chilies
6 cans         Great northern beans
½ cup          Cornstarch
½ cup          Cold water
S&P             To Taste

Directions

  • Trim all fat and cartilage from the chicken breasts and sprinkle with salt and pepper.
  • Place on a baking pan. 
  • Bake at 325 degrees for 20 to 30 minutes or until chicken is cooked throughout.
  • Allow to cool, then hand pull or chop into small pieces.  Set aside. 
  • Saute diced onions, oregano, and olive oil together in a soup pot. 
  • Cook for about 5 minutes. 
  • Combine water (if using), chicken broth, garlic, cumin, cilantro and green chilies. 
  • Add to the sautéed onions. 
  • Bring to a boil, reduce heat and simmer.
  •  Add chicken and great northern beans. 
  • Simmer for 15 minutes, stirring frequently.  Adjust S&P.
  • Blend cornstarch with the cold water and add to chili. 
  • Continue to simmer until chili thickens and beans are soft, then remove from heat. 
  • Garnish with fresh chopped cilantro, Monterey Jack cheese, and sour cream. 

She also whipped up a batch of cornbread muffins and I thought the meal turned out very well and so did the recipients so now it’s on to next week’s meal for them - really glad we can do a little something to help them.

  1. I don't know if I told you, but our friend Greg has brain cancer and has been very ill since June. Cauleen has so much on her plate with two special needs children. Their church has set up a food train to bring in meals. It's such a great thing to do and Cauleen appreciates it so much. With that said, Bev is really providing her a wonderful service. Soup looks good.
