Kathy’s Quick Visit


Kathy and her special friend came to town for a quick trip in order to attend her 30th high school reunion – how could that much time have passed since she graduated.  She spent much of her time visiting with old friends who were not at her reunion which meant she was only at our place for one supper meal and we opted for a dish Bev really likes to make for company.

The supper meals included just the entrée and some lettuce with dressing in it.  The entrée was Pan Seared CatfishWith Brown Butter On Black Olive Toast which I had blogged about six years ago but don’t remember the source of the recipe – rather than re-post it here, just click on the above link for the recipe.  It looked like this back then.


Here is a shot of it this time and I may have added a little too much sauce as the fish is hidden but it was just as delicious as I remember it.


For the salad we had some Hidden Valley Ranch from a mix, homemade 1000 Island, and homemade blue cheese using the following recipe which taste different than those made with mayonnaise.

While at Simonton’s Cheese & Gourmet Shop in Crossville, TN a couple of weeks ago, Bev tasted their bleu cheese and proclaimed it the best ever so we bought ¾ lb. of Daneko Blue Cheese at $16/lb so we could turn it into salad dressing.  It is supposedly one of the best that Denmark has to offer.  We used our go to recipe:

Ingredients:
8 oz good bleu cheese, divided
4 oz cream cheese
4 oz sour cream
Pinch garlic powder
Buttermilk to thin

Directions:
Put half the bleu cheese, the sour cream, cream cheese, garlic powder, and a splash of buttermilk into a deep bowl and blend with an immersion blender, adding more buttermilk as needed to achieve the desired consistency.  Crumble and fold in the remaining bleu cheese and store in the fridge for a few hours to allow the flavors to marry.

It was a very good meal and a big hit with the guests.

  1. Larry, Nothing like a family visit, albeit a short one! That pan seared catfish with brown butter would be right in my wheelhouse...sauce not needed although Laurie would love it. Love a good blue cheese dressing and now we'll have to make a trip to Crossville to check out that cheese and gourmet shop! Take Care, Big Daddy Dave
