2014 Florida Trip – The Super Bowl at Waters Edge

Since our musician was leaving on Sunday morning, Gabe, and his wife Tammy singing harmony, entertained us one last time around the pool the evening before the big game.






Then on game day, the campground provided burgers and dogs for a super bowl party and the campers brought a dish for a nice get together – except we were nearly all Broncos fans.  Our donation to the event was hot dog sauce (we knew it would not exist otherwise) and Jalapeno Popper Dip using the recipe from Mary  at One Perfect Bite, which I adapted a little bit for what we had on hand.

Jalapeno Popper DipAdapted from One Perfect Bite

Ingredients:
16 ounces cream cheese, softened
¾ C. mayonnaise
1 C. shredded pepper jack cheese
1 can (4 ounces) chopped green chilies, undrained
4 large jalapenos, seeded, rough chop (to taste)
2 large 5jalapenos, rough chop (to taste)
2 T. spicey sour pickle juice
¾ C. shredded Parmesan cheese, divided use
¾ C. panko bread crumbs
1½ T. olive oil
Corn chips, tortilla chips or assorted crackers

Directions:
1) Preheat oven to 350 degrees F.
2) Using a food processor, pulse jalapenos to desired size (or chop small by hand) then add cream cheese, mayonnaise, pepper jack, chilies, and 1/2 cup Parmesan and processor until blended.  Spoon into an ungreased 9”x9” baking dish.
3) In a small bowl, combine bread crumbs, oil and remaining Parmesan. Sprinkle evenly over cheese mixture.
4) Bake until crust is golden brown, 20-25 minutes.

Notes – The primary deviation from Mary’s recipe is the fresh peppers and pickle juice I used in place of 4 oz. canned peppers with juice.  The other difference is that I used a pan with more area than Mary and increased the amount of panko and oil to cover it.

The hot dog sauce (that’s West Virginia speak for hot dog chili) was made by our usual recipe  except we added no cayenne to the part we took to the event.

One last shot of the great entertainment we got to enjoy - the skeeters had ran us inside.


I didn’t get any shots food shots but our dip looked just like Mary’s except wider and thinner.  Both the dip and the sauce were big hits and a couple of folks requested the dip recipe.

  1. Lovely way to enjoy the Super Bowl and I'm sure everyone had a better time visiting and nibbling on the food than watching the game. Sorry the bugs ran you in, but we stopped watching the game after the half time commercials, which were in our opinion a let-down too.

    I hope you've gotten the Florida bug and we'll see you again next winter ;)

  4. One of the reasons we don't like Florida so much is the skeeters. When we were there you could not go outside at dusk or you would be eaten alive. Sure wish we had some entertainment like that in our park. That would make for a great time.

  5. Larry, Lucky you had the pre-party and food for the super bowl as the game and the ads were pretty much non-event...and, as a Bronco fan...it was a real let down! Snowing steadily here today...building up in intensity. Predictions range from 2 inches to 7 inches of snow... Yuk! Take Care, Big Daddy Dave
