2014 Florida Trip - Salmon Pasta With Sun-Dried Tomatoes

Salmon Pasta with Sun-Dried Tomatoes is the title of the cdkitchen recipe we started with but we changed it enough to make the title of different.



Salmon With Sun Dried Tomato Pasta – Adapted from cdkitchen.com

Ingredients:
4 cloves garlic
2 shallots
3 tablespoons oil
1/4 cup sun-dried tomatoes, chopped
1/2 cup chicken broth
2 salmon filets
8 ounces angel hair pasta (we used leftovers)
2 tablespoons capers, rinsed
Fresh Parmesan cheese

Directions:
1. Chop garlic and shallots and saute in oil, and set aside.
2. Bring broth to boil; add sun-dried tomatoes; let sit for 15 minutes. 
3. Add garlic mixture and capers. Set aside and keep warm.
4. In the meantime, cook pasta according to package directions, drain and toss with the sauce
5. Top pasta with salmon and grate Parmesan cheese over top. Serve immediately.

Notes: The original recipe calls for 8 oz of pasta but we used some leftover orzo.  It calls for 6 oz of cooked salmon mixed into the pasta but we used fresh salmon filets cooked under the broiler and added atop the pasta – it was too rainy to grill out.  The recipe says it’s for four servings but we sauceaholics used most of the sauce for two servings.



It's a pretty dish and I enjoyed it but would not put it on my OMG list.  If I were to make it again, I would thicken the sauce with some corn starch.

  3. There really isn't that much sauce there for as much pasta as they recommend, so it's not surprising that you used it all. I too would thicken it with cornstarch, so it would cling to the pasta better. But it does look like a nice change of pace.

  6. It certainly looks delicious, Larry! Personally, my husband won't eat salmon if it doesn't have the herbed garlic butter sauce on it that I've been making for years - also great over pasta.

    BTW, if you've tried to come to my blog recently, it's been locked by Blogger. Someone has been trying to embed malicious codes in blogs and mine was one of a few dozen hacked in the past couple of months. Hopefully, Blogger will clear my site soon and my friends will be able to join me once again!
