Breakfast Pork Loin and Tater Cakes

We had Tyler Florence’s Smothered Pork Chops again recently (click link for first time) and I used the leftovers for a breakfast meal.  My shot of the dinner meal didn’t turn out too well but it was very good.

I usually just shape the leftover mashed potatoes into cakes and fry them, but I wanted to go fancier and asked Bev to work her magic on them - she mixed in a beaten egg, flour, cream, and chopped chives.  To fry I added them by the heaping spoon full to a 12" skillet coated with olive oil and shaped them into patties with the spoon back.

I nuked the pork loin a little to warm it and added it to the skillet to crisp, along with the potato cakes, and an egg cooked sunny side up in a ring mold with a glass lid on it – wish I’d taken a cooking shot.  This is the result and it was totally delicious.

  1. Holy potato cakes!!!!! That plate of food looks so good. Is the sauce on the breakfast the same sauce that was on the dinner pork? And love the little sticks of chives across the eggs. Nice touch.

    1. Thanks Lea Ann. The only sauce is the little that was still on the meat, but afterward, I wished I'd seen if we had any of it left.

  2. Larry, You can't miss with either of these meals! The flour, eggs and cream sure change the texture of those potato cakes. They look great! By the way, this is why I can't really compete with you for breakfast... You have lots of leftover ingredients and an endless immagination. Take Care, Big Daddy Dave

  5. Looks delicious, Larry... If I ate all of the breakfasts that you cook, I would weight 100 pounds more than I do now... Darn it all!!!!!! ha

  10. I love pork tenderloin...I think I must "play" with my leftover potatoes too much....they don't hold their shape. They are good but need to be more firm. Guess I should leave out the sour cream. :-(

Kathy - I put them in the pan and don't touch them until they have a good bottom crust (like a pancake), then I tilt the pan toward the spatula to help them slide on it easier and hold their shape. We often put sour cream in mashed potatoes, but I like the idea of direct addition to the potato cakes - maybe a little flour to make up for it.

  13. I've heard a saying that goes something like "Eat like a King for breakfast, A Queen for lunch and a Pauper for dinner". That is a King's breakfast! Looks delicious.

  15. Heck, I would have been happy with just the potato cakes and egg on top, everything else is just a bonus! That is quite the plate, Larry.

    I was watching Man vs Food yesterday, I forget where he was, but it was a brisket slider challenge. The brisket slider had thin sliced brisket (roasted it looked like, not smoked) warmed in gravy and chopped on a mini challah roll and a potato pancake in the sandwich too. Doesn't that sound like a good way to use leftover smoked brisket?
