Fajita Night & Morning

I wasn’t planning to post this meal, but it was so good I had to.  When we had the chicken fried steak a few days previously, I got one too many flat iron steaks from the freezer and the extra one needed to be used.  As I often do for grilling recipes, I turned to Chris Grove over at Nibble Me This, plus he made some delicious fajitas at last year’s blogger party.  He had several to choose form, but I opted for his April 10, 2010 Steak Fajitas – it sounded delicious, I liked the sauce recipe, and we had everything on hand to make it.

One of the worst inventions for us lazy cook’s is the gas grill, but for this, I forced myself to crank up the Weber charcoal, which only takes an extra 5 minutes of actual effort.  I made up the marinade in the morning then the sauce about mid-day and in the afternoon I added the meat, onion, and peppers to it for a 2 hour soak.  Check out Chris’ site at the above link for the recipes and photos.  I also tossed on a smoked chicken breast to crisp up the skin.

When all was done, I headed for the kitchen.

I made three for myself – they were small you know– and I really enjoyed them. 

We all liked both the both the marinade and the sauce and will use it again – thanks Chris for a delicious meal.

For breakfast the next morning, it was a fajita scramble – of course.  I lightly nuked the leftover beef, onions, and peppers then added them to my skillet along with some toppings leftover from supper, sliced black olives, and diced jalapenos. 

When this was warmed thru, I add halved grape tomatoes, followed a couple of minutes later by six beaten eggs.

When all was done, I topped with Mexican sauce, shredded cheese, and lettuce then sided with warm flour tortilla wedges.

Unfortunately, I’d only made a half recipe of Chris’ sauce and we ate it all at dinner, but the Mexican sauce I’d found in the freezer a few days ago worked well.  Bev’s sister, Pat, was here and we all thought it was delicious.

  1. You're a cruel man Larry...to talk about grilling when my poor little Weber is under 8 inches of snow. :/ I remember seeing Chris's fajitas and believe I've bookmarked the recipe.

  7. I can't claim culinary greatness for a fajita recipe...it's been my experience it's hard to make a bad fajita, ha ha.

    I love the idea of a fajita scramble, I don't think I've done that before but it makes excellent sense.
