Mexican Chicken Ala Steph

When someone has a site named Plain Chicken, posts oodles of delicious looking chicken dishes, then proclaims  about a chicken dish “This could quite possibly be the best thing that I have ever made!” about  the Pollo Loco –Mexican Chicken and Rice, it must be tried.

It just happened that we had three pieces of chicken left from our Grilled Cheesy BarbecueChicken in the fridge screaming to be turned into this dish.  We found the Lawry’s marinade with no problem but we ended up buying Southwestern Style Chipotle Cheddar Dip.  Since Bev didn’t get home with the marinade until 4:45pm, the chicken only got a 2 hour soak.  I grilled it over medium heat to 160* and let it rest for about 10 minutes.

Bev made the rice and since we had 3 cups of chicken broth we made 1 ½ times the recipe.  Also, we didn’t have dried minced onions so she used ¼ cup of fresh sweet onion and some onion powder then she added some corn and peas - mostly for color.  The corn was our last because some critter raped our last patch when it was at the perfect stage – we got a total of 11 ears vs. the 50 we should have gotten.

We sided it with fresh picked green beans - I forgot I wanted to grill some peppers.  Here’s my plate to which I’d added some chopped cilantro and pickled jalapenos.
Bev’s sister joined us and we all thought the dish was very good.  The two things I’ll do differently next time to match our taste is salt the chicken before grilling and spice up the rice a little with some chopped jalapenos or other heat source – thanks Steph for a fine dinner.

  1. I've got that recipe bookmarked to make soon also. It's just that my fridge is stuffed with farmer's market goodies that need to be used up before I can try something new. First a Diet Coke and now a bottle of wine? Those veggies do look so wonderful. I remember when my mom had a huge garden on the farm, those pesky racoons would make off with our corn. At least that who we blamed. It was always a night time heist.

  6. Oh yeah, I put that one in my try soon line up too last weekend.

    What kind of critter got to your corn, "bug critter" or "animal critter"? What a *$(# shame but at least he left you a little bit.

    How did your corn turn out this year? I have yet to have any "summers best" corn yet this year, everything has just been okay.
