Chicken And Tomatoes Ala Mary

For many years, Bev has liked to put cheese, onion, and BBQ sauce on grilled chicken breasts and when I read Mary’s recent post for Grilled Cheesy Barbecue Chicken over at Deep Dish South, it reminded me we hadn’t had it in a while.  We had also recently tried Mary’s BroiledTomatoes and since we have lots of maters, we decided to have them again, except we did them on the grill on a grill pan.  Check out Mary’s site for all of the recipes.

For the chicken, I pounded the breasts down to the same thickness, mostly because I like to use my rubber mallet on them, coated them with oil and seasoned with S&P. I grilled them over medium heat and after flipping I added BBQ sauce, cheddar cheese, crisp bacon, and diced onions.  When they were done, I garnished with diced tomatoes and chives.  

For the tomatoes, I dusted with flour seasoned with Emeril’s Essence, dipped in egg wash, then into saltine cracker crumbs.  I cooked them on a grill pan that was sprayed with Pam and after turning, I added parmesan, mozzarella, bacon, and basil (at the end).

This is my plate, including a simple salad with bleu cheese dressing.
The chicken was very good except I had a tad too much of Pioneer Woman’s BBQ Sauce on them so they were a little sweeter than we like.  The tomatoes were delicious but using a grill pan, even though it was sprayed with Pam, did not allow them to crisp up like they did under the broiler.  We liked the cracker crumbs and adding the parmesan directly to them.  Even though not as crispy as I would have liked, the flavor was still very good and topped with Mary’s Cajun Mayonnaise they were awesome – I could eat them every day until we run out of tomatoes.  Thanks Mary for a great meal.

And for breakfast the next day, Bev whipped us up an omelet made from the left over chicken.

  4. I'm still waiting for local tomatoes to ripen, hopefully by next Saturday they will be available at the market. You have really dressed up those chicken breasts, Larry.The whole meal looks delicious.

  5. We got some amazing tomatoes from a farmers market right at the beginning of the season.. we haven't been able to get decent ones since .. bummer! Everything from the chicken to the omelet looks fantastic Larry!

  8. Yum Larry - um, can I have a plate of that too please?! Although, those eggs look pretty darned good too. I was wondering how the tomatoes would do on a grill - I'm with ya on the crispiness that the broiler gives. Thanks for the linky love too!!
