Asparagus and Mushroom Scramble

Scrambled eggs are a great way to use up things. I had a couple of shitaki mushrooms and a piece of a yellow pepper that desperately needed to be used along with a green onion that was fading. So I chopped them and added some fresh-from-the garden asparagus and sautéed them in a little olive oil.

Added a couple of beaten eggs and sided with the last piece of English muffin.

The scramble was delicious and I consciously left out cheese and especially bacon to be sure I could get the full impact of the veggie flavors.

And now I know why I'm still alive.  I was on my computer the other day while Bev was watching her regular afternoon show (The Doctors) where a group of doctors discuss a variety of health and medical issues, when the subject of eggs came up and it caught my attention. If you stop by here fairly often, you know I've been known to eat the occasional egg and I can't remember exactly what the doctor said but it was something along the lines of - new studuies have shown that eggs are really very good for you (the ninja food).  He basically confirmed what it says in these few sentences from Incredible Eddible Egg.

Sounds like the above meal was pretty healthy and I might just have an egg for breakfast tomorrow too :-).

  1. Mmmm, my kind of breakfast. Eggs are also easily digested for those like me with digestive disorders. After major innards surgery 12 1/2 years ago the food I most craved was an egg sandwich - and that is what I got for my first lunch once I could eat again.

    Eggs, peppers, green onion and an english muffin is pure eggy joy - thank you so much for sharing this, Michelle :o)

  2. Hi Larry, We don't enough enough eggs I don't think... I just remember being told many times NOT to eat so many.. So which is it??????

    I love eggs and we have omelets every Sat. morning... Such a treat. Mine is full of veggies and I don't add any meat either. But--I do add some low-fast shredded cheese... So delicious.

    Hope you are having a good weekend. It's cold up here this morning--33 degrees... Brrrr.

  4. As one who also enjoys an occasional egg, I do appreciate that information. ;-) I have a Nutritionist friend who preaches about the value of eggs. I just want to hug her when she does that. So, with all that said, I've got a clever little benedict up my sleeve for Sunday breakfast. Happy egging Larry.

  6. I keep waiting for you to get into raising hens for eggs. Then you can be self sourced for your egg, asparagus, and mushroom plates.

  7. Bev and I have actually discussed it, but then I'd have to deal with the chickens when they got old (I don't turn animals into meat) and we'd want them to be free range so would have to train the dogs and cat not to eat them, and so on and so on :-).

  8. A good fried egg sandwich with mayo and real melted cheese on whole wheat bread during weekday mornings will keep me going all day! A big omelet on a weekend morning filled with onions, peppers, cheese and salsa along with whole wheat toast and maybe some sausage or bacon will hold me until the next day! My dachsund loves eggs! He is fun to watch when I feed him hard boiled eggs. Everybody coments on his so shiny coat that I attribute to the high protein in eggs. By the way, my Dad always said the best food for your money was an egg! I think he lived on them during WWII.
