A Couple Of Very Good Meals From Leftover Chili And Meatballs And A Little Snow

We had some sauce and several meatballs left from our recent meal and in thinking about something other than the same meal, I decided to make a casserole dish by cooking additional spaghetti.


Spaghetti Casserole

Ingredients:

1 lb. angel hair pasta

3 cups leftover Rao's Marinara

5 meatballs

¾ lb shredded mozzarella cheese or more to taste

To taste, grated parmesan

Directions:

Cook the pasta al dente, drain, and return to the pan.

Reheat the sauce and mix into the pasta.

Reheat the meatballs and cut in half. I wanted to be sure we got a good bite of meatball rather than chopping them up.

Spray a 11"X11" casserole dish with Pam.

Add half of the pasta to the dish in an even layer.

Nestle the meatballs into the pasta.


Add a layer of mozzarella and some parmesan.

Add the remaining pasta in an even layer.

Add another layer of mozzarella and Parmesan.

Bake at 350F for about 30 minutes (Mine had an internal temp of 170F).  I let it get a little too brown and covered with foil to prevent more browning.

We sided it with a salad.

The Verdict:

We thought it was delicious and maybe better than the original tossed spaghetti and meatballs.  The next time, I will cut the meatballs in quarters and spread them around more.

Leftover Chili

I’d mentioned before that I came from a town that loves hot dogs and they are only dressed with sauce (not chili), mustard, and onion.


So I rarely put chili on a hot dog but since we had leftover chili from a recent meal, I made up this delicious concoction. 


We are again getting a taste of winter on the last day of January but this time with about 3" of snow and temps in the teens so this is the view from my chair.

  1. That view out your window is stunning! Yay for a little snow. I adore chili dogs, whether with the authentic chili sauce or left over chili. And your casserole looks really good. No leftovers topped with an egg this time?

  2. Oh how I just LOVE your cozy hearth area with such a beautiful view of a fresh snow! It almost sounds poetic! But seriously, what a joy to sit in front of a warm fire and watch nature outside, even though its been so terribly cold. Same goes for down here in SC....I fear my gardenias and azaleas are zapped for blooming this spring. But Mother Nature might surprise me! I love a good baked spaghetti pie/casserole and love how you used the meatballs inside. We did the same thing, only with a new lasagna recipe . . . the meatballs were the only ingredient that we like! It's a bummer when that happrens. But I'm really inspired by your creation!

  3. I really should not come here when I am hungry. The spaghetti/meatball casserole is a great idea! I have always loved a good chili dog and yours look terrific. I'm glad someone is getting snow! We have gotten so little here in Oregon. The view from your chair is epic.
