Happy Birthday To Big Dude’s Eclectic Ramblings And A Few Delicious Random Meals – Burrito, Sandwich, Quesadilla

It’s hard to believe that my first blog post was 15 years ago today and my first total post said “Well, I'm new to this blogging thing and this is my first - mostly to just see if I can do it. My next goal will be to learn to post pictures, then I'll worry about making the blog look cool.” 

Most of the folks who have been my blogger buddies through the years are no longer posting and I really appreciate those of you who still do stop by and I love to hear from you via your comments.  I’ve considered quitting a few times until I realize how much I use my blog to research our lives and recipes during those years so I guess I’ll continue until I run out of things to post about.

We are hopefully going to be traveling more so I’ll have more to post about than the meals we cook at home.

BUT FOR NOW HERE'S SOME FOOD PORN

Bev had made a big batch of refried beans and we had some cooked breakfast sausage in fridge so Bev decided to turn them into breakfast burritos.  I cooked some diced onion then added the sausage to warm it followed by beaten eggs and a handful of shredded cheddar.  I cooked them pretty wet as they would be nuked to melt the cheese and warm the salsa on top of the burrito.  Then Bev topped them with chopped lettuce and tomato.  It was delicious.

A few days later, Bev wanted to use-up the deli Turkey we had in the fridge so she opted for a sandwich for breakfast.  The construction was fresh sour dough bread, mayo, turkey, crispy bacon, Colby jack and pepper jack cheeses, lettuce, onion, and tomato. She considered grilling but decided to go this way and I don't how it could have been any better.

And what do you do with leftover beer can chicken and avocados that needed to be used, why you make Mexican of course – chicken quesadillas to be exact.  I just chopped the dark and white meat chicken along with the skin and nuked the chicken just to warm and I did the same to our leftover refried beans.  Then I chopped and sweated some peppers and onions while frying the chicken skin (mixed it in with the chicken) and built the quesadilla - beans and chicken on one half and cheese, peppers, and onions (plus jalapenos) on the other half.  I cooked them slowly on the griddle with butter then folded, plated, and topped with guacamole, sour cream, and salsa.




They were delicious and a great use of the leftovers and I still had a little chicken for a scramble.

  6. Happy 15th! You made me realize that I've been blogging for 16. Time flies! All of the meals look tasty and I have all the ingredients for that turkey sandwich on hand...guess what's for lunch today?

  7. Happy Blogversary, Larry! I started in 2009 too, along with so many other people. So many people have gone to Instragram (including myself) but I still want to keep my blog active as some people still like to come and visit. I love a good quesadilla!

  8. Happy Blogoversary Larry! I think we've been doing this since about the same 'launch' times in 2009. You're right about how some bloggers are still blogging while others have dropped out. I'm glad that you've hung in there to continue on!
