Avocado Scrambled Eggs & Bevs BD Meal - A Few Days Late

 We have had some really good scrambles from 30 New Ways To Eat Scrambled Eggs from "Taste Of Home" and the latest dish is simply called Avocado Scrambled Eggs and I adjusted the recipe down from four to two servings.



Avocado Scrambled Eggs – Adapted from Taste Of Home

The Ingredients:

3 bacon strips, chopped

6 regular eggs

1 tbsp half and half

S&P to taste

Shredded cheddar to taste (added by Larry)

½ medium ripe avocado, peeled and cubed

1 pat butter or a little bacon grease

*- We get our normal eggs from a person who has chickens and they are a variety of sizes which is why I just call them regular eggs in my recipes.

The Directions:

In a skillet over medium heat, cook the bacon the way you like it then, if necessary, remove extra grease – leave the bacon.

In a bowl, beat eggs with milk, salt and pepper then stir in avocado.

Add egg mixture and cheese to the pan and push eggs into large curds and cook until they are done to your liking – moist for us.

I sided it with some fried potatoes and onions – I had forgotten to add this little amount of potatoes to our recent batch of clam chowder.


The Verdict:

It was very good as you would expect from scrambled eggs with bacon in them but I'm not sure I could taste the avocado.

Bev's BD

Bev's BD was a couple of weeks ago and it was the day after she got back from St. Marteen so I made one of her favorite meals for welcome home and Happy Birthday.  We have it every once in a while but I'm sure it's been a few years.  The recipe for Catfish Pan-Seared On Black Olive Toast can be found by clicking on the link.

  2. Everything is better with bacon. Even if you couldn't taste much of the avocado, at least you're getting the health benefits. The link to the catfish recipe doesn't work. I'd love to look at the recipe. And happy belated birthday to Bev!

  3. What a great idea! We love avocado with eggs but usually slice and serve it on the side so we can give it a little S&P or a squeeze of lime juice. Happy Birthday to Bev!
