Southern Fried Cabbage

I’ve seen information that says the origin of Doolittle is both Irish and English and on St. Patrick’s Day, I always choose to go with Irish and we usually celebrate.

With Bev and Pat in St. Maarten and Cindy in California, I was on my own for St. Patrick’s Day and since I was still dieting and had a half head of cabbage in the fridge, I opted for a Keto friendly, pretty low-cal Irish dish – fried cabbage.  After looking at several online recipes and finding them to all be similar, I settled on Mary’s Southern Fried Cabbage recipe from her “Deep South Dish” blog (I assume the title means southern Ireland).  Since I had just a half head of cabbage, I amended Mary’s recipe to get the one below but you can click on the above link for her original.

Southern Fried CabbageAdapted from Deep South Dish

The Ingredients:

2 slices bacon

2 tablespoons butter, divided

½ cup chopped onion

½ medium to large head of cabbage, chopped (about 10 to 12 cups)

½ teaspoon kosher salt

1/8 teaspoon freshly cracked black pepper

1/4 teaspoon Slap Ya Mama Cajun seasoning

1 teaspoons apple cider vinegar

Dash dried red pepper flakes, optional

The Instructions:

1. Chop the bacon and cook in the bottom of a lidded pot until the fat is rendered. Add 1 tablespoons of the butter and the onion and sauté about 4 minutes.

2. Add a splash of water to the bottom of the pot to deglaze the browned bits in the bottom. Add the cabbage, salt, pepper and Cajun seasoning, reduce to a low simmer, cover and cook for about 30 minutes, or until cabbage reaches the desired consistency, stirring several times.

3. Stir in the remaining tablespoon of butter and the cider vinegar; continue cooking until cabbage begins to caramelize, if desired, otherwise, taste and adjust salt and pepper, and sprinkle with red pepper flakes, if using.

When growing up, mom cooked cabbage very done (like most veggies) so I probably cooked mine more than most of you would but it still had just a little crunch to it.

The Verdict:

I thought it was very good and I doubled the Slap Ya Mama amount.  I will definitely make this recipe again.  If you like fried cabbage, I have to believe you would enjoy this version.  While Mary didn’t list the calories, I looked up some other recipes that had more bacon, used a whole head of cabbage and still only had about 600 calories for the whole dish so I assumed I could eat as much as I wanted and still be under my 450 dinner calorie maximum.

  2. Larry, I love cooked cabbage but the only time I've had fried cabbage was in a restaurant. Cabbage is one of the few green vegetables that I can eat some of from time to time due to my latest meds. Regarding sausage gravy, the only good sausage gravy continues to be at Mama's Grits/Little Italy. The guy who owns the place and who makes the sausage gravy is built like me and I suspect he eats like me too! You'd mentioned getting rid of your moss. We do like the moss in our rocks and across our back yard. Our tree guy told us that if fertilizer and weed killer would harm our giant oak tree...which we love and which would cost huge bucks to take down if it died. We grow moss, a little grass and some weeds in our backyard and they get weed wacked by our lawn service every other week. Take Care, Big Daddy Dave

  3. I am somewhat doubtful that a southern Irish dish would includes Cajun seasoning but as long as you enjoyed it that's the main thing!

  4. I like cabbage, so must try this recipe. For St P. day I made a recipe from Once Upon A Chef blog. I know you follow her. She roasted cabbage, potatoes and carrots on a sheet pan drizzled with horseradish butter. Really good. And of course served with Corned Beef.

  5. That is so funny that I see this post. This year, Craig and I opted out of Corned Beef. We love cabbage, so I just winged it and made fried cabbage. My husband loved it! I see that I must've had ESP as I used the same ingredients. This is so delicious!
