Eliza Visits And BBQ Sundae Ala Mary

Wende called and advised they would like to come down on Sunday of Labor Day weekend so that Eliza could go for her first actual swim in the lake and we said you bet.  As soon as she got on the dock, Eliza began saying she wanted to go in the big water and we accommodated her by letting her swim with both Wende and Cindy so she could go between them.  

Since we would be at the lake much of the afternoon, I wanted to have a supper that was easy and could be made ahead of time and this one was sure to fit the bill.  When I had seen Mary’s BBQSundae recipe on her Barefeet In The Kitchen blog, I had just smoked a pork butt and the pulled meat has been looking for a good home.  I was sure this dish was right up our alley but I didn’t want a lot of leftover beans so I cut the recipe to one third of Mary’s original and for the Sundae, mine is in ().  Check out her site for the original recipes.

Baked BeansAdapted from Barefeet In The Kitchen

Ingredients:

1/3 pound ground beef cooked, crumbled, and drained

1/3 pound bacon cooked

2/3 tablespoons bacon drippings

14 ounce cans kidney beans (light red))

14 ounce cans white beans (cannellini))

14 ounce cans Pork & Beans (Van Camps)

2/3 cups onion, chopped 1/2" or smaller

1/3 cup light brown sugar

1/3 cup ketchup

1/6 cup molasses

1 tablespoons yellow mustard

The Instructions:

Drain all the beans, except for one can of Pork & Beans. Combine all ingredients in the crockpot and heat on HIGH for at least 4 hours or on LOW for 8 hours. (Larry cooked everything in the same 12” skillet with a lid and stirred the beans occasionally).


BBQ Sundae

The Ingredients:

1 lb hot Sweet And Tangy Pulled Pork (Larry’s pulled pork)

3 cups hot Baked Beans (one cup per bowl)

1 recipe cold Memphis Coleslaw about 4 cups worth (Bev’s homemade slaw)

1 cup warm or room temperature Sweet And Spicy Barbecue Sauce (Sweet Baby Ray’s original)

The Instructions:

In the dish of your choice, layer the beans, then the pork, drizzle with barbecue sauce, and then top with coleslaw.



The Verdict:

The BBQ Sundae’s were a big hit and we would definitely make them again as well as the beans for other uses – wish I had made more now and they can be a god alternative to our ranch beans.

Eliza had a great time and I believe we will turn her into a water dog like all of her cousins.  After supper we went on a short boat ride and Romeo let her take a turn at the helm.


I believe we showed Eliza a great day and she went home happy.  We always want the grandkids to say “let’s go to Grandpop and Meme’s” since this was a big reason we built the house on the lake .
