Pork Ribs On The Weber & Strawberry Rhubarb Pie

I had previously cooked a pork butt on my Weber Grill with a smoke box for the Thursday meal for our friends and today it was time to give ribs a try.  I cooked two slabs, cut in half, with 1½ for them and a 7-bone half for us.  For my rub, I used my old standard of a mixture of Billy Bones Competition and XXX Cherry put on both sides as thick as would stick.


By putting one main burner under the pan and the firebox burner on low, the grill maintained a temp of 225F which is perfect for this job.  I put hickory wood chunks in the smoke box every hour and rotated the pan after three hours.  At the four hour mark, I flipped the ribs and brushed on a coat of Sweet Baby Rays BBQ sauce to the backside then flipped again after 15 minutes, sauced the top, and removed them when the sauce was set a little.


They were very good but could have come off about 30 minutes sooner.  We sided the ribs with beans and slaw and our friends were very happy with the meal.

A few days later we made a trip to the Amish Farm Market to stock up on goodies which included more of their delicious tomatoes and our first fresh corn.  But before supper, we enjoyed happy hour on the dock including a little rain shower.


Then we made our way back to the house for a supper of delicious tomato sandwiches (Amish bread, mayo, tomato, S&P) and boiled corn on the cob.  The meal was great but the real star of the show was a slice of strawberry rhubarb pie that Cindy made that afternoon using a recipe from Simply Recipes.



The pie was delicious and these late berries were the tastiest we’d had all season – likely due to the recent hotter and sunnier weather.

We really enjoy our 45 minute drives down to the Amish market near Englewood and while I stay in the car with the pups while Bev and Cindy shop, it makes for a good excuse to go somewhere.  No need for me to go in and risk exposure especially now that things have opened up and Covid-19 cases continue to go up – even though we’ve mentally adjusted to the situation and life is becoming more normal, I believe the risk of exposure is getting greater not less so I’m even more cautious.

  3. Larry, Those ribs look great! Our Weber went bye bye yesterday. It needed repairs and parts replacements...all beyond my skill set. I'll be shopping for something less expensive next time so I won't feel so bad about wasting money. Love strawberry-rhubarb pie...but I've never had tomato sandwiches.
