The Kids Annual Summer Visit - Part 1

Daughter, Kathy, and her three girls (Katelyn, Jennafer, and Lauren) came in from San Antonio, TX for their annual visit to the lake.  Joining them were Reece and Riley Walker (Rhett’s daughters) and two of their friends for a total of eight visitors and adding in Beverly, that is nine females and me – Cindy and Pat were traveling or it would have been 11 to 1 – as my Dad would say “sounds about even according to players.” J

Other than visiting, their primary purpose for coming to Almost Heaven South was to play on the lake, especially pulling a tube with the jet ski, and Bev and my main function was to provide food for the throng.


For all of the meals, cooking the best food for a crowd with the least effort was a large consideration and for breakfast that equated to casseroles.  So Sunday morning, it was Ham And Cheese Hash Brown Casserole from Steph at her Plain Chicken blog.  I just followed her recipe with a little more ham (to use up what we had) and I forgot the Parmesan cheese please click on the link for the recipe and more shots.  The shot above is from her blog as my plated ones were bad but here is my shot of the dish.


We thought it was very good and Kathy especially commented on the ham which was Kentucky Legends and one that we really like.  However, not a single one of the girls ate any as they got up after noon and headed for the lake so breakfast meals just got way easier for me.  I advised that henceforth breakfast would be cereal or whatever they could find in the fridge and it worked perfectly the remainder of the visit.

For suppers, Kathy had requested three things: Creamy Garlic Butter Tuscan Shrimp, Low Country Boil, and potatoes fried in a cast Iron pot.

We had the first one using the recipe from Café Delights and since we followed the recipe (but tripled it) I won’t reproduce it here.  Just click on the link for the recipe and some great shots of it.  Granddaughter Lauren did the cooking while I read the recipe to her.

With 10 plates to make up, we forgot to get plated shots. 

Bev thought it was okay, I thought it was good, and Kathy thought it was fantastic so there you have our recommendation.  Bev and I both preferred Chef Lea Ann’s Spicy, Creamy, Shrimp Pasta.

  1. All of those girls are LUCKY to have you and Bev there ---not only for the delicious food, but also for the water entertainment.

    I had 8 family members here yesterday --and I made all of the traditional 4th of July foods --including Apple Pie and Watermelon....

  3. After noon??? I remember those teenage days. That casserole looks really good. And the shrimp dish sounds good too. That Spicy Creamy Shrimp is one of the most popular recipes on my blog. Thanks for the mention and compliment. Have a great visit with the family.

  6. Larry, That shrimp dish looks great. Of course Laurie and I would agree with you on the spicier version but still... The lake trumps breakfast, that's kids for you. I almost remember that I was the same way a long, long time ago...in a place far, far away. Take Care, Big Daddy Dave
