Grouper Sandwich And A Mouser

We had three nice grouper filet pieces in the freezer that needed to be used so we invited our neighbors down and made fish sandwiches.  We first thought fried but opted for a healthier grilled fish and selected a recipe from Emeril Lagasse that sounded very good.  I made double the recipe below for our three fillets and it was just the right amount.  Not sure which Paul he’s referring to but suspect Prudhomme.


Paul's Grilled Grouper

Ingredients:
4 tablespoons melted butter (maybe it wasn’t actually healthier)
3 cloves minced garlic
1 tablespoon finely grated Parmesan
1 tablespoon Essence, recipe follows
4 tablespoons olive oil
1 (3 1/2 to 4 pound) grouper, fillets removed with scales intact (mine was skinless)
1/4 cup finely chopped fresh herbs, such as tarragon, thyme, basil or chives

Directions:
Preheat the grill to medium-high.

In a small bowl combine the butter, garlic, Parmesan, Essence, and olive oil and whisk to combine.

Lay the fillets on the grill, scale side down, and brush generously with the melted butter mixture. Close the grill cover and cook for 3 minutes. Open and brush again with the melted butter mixture. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 12 to 15 minutes for this size fish. The last minute of cooking time, sprinkle with the fresh herbs.

Cook’s note:  My fillets were skinless so I sprayed one side with Pam and put it down on the grill while spreading the top side with the butter mixture.  After a couple of minutes with the grill lid down, I flipped the fish and topped the other side with the butter mixture.  When it got a little crust on the bottom, I flipped again to get another crust and removed it when it began to flake.

Add a little cheddar cheese, onion, lettuce, and tartar sauce or mayo and you have one fine sandwich – they were a big hit.

I’ve posted before about how effective Kitty is as a mouser but living in the country, we also have a good many native mousers as well and when we went into the garage this guy was laying in the floor.


With everything closed I, I’m not sure how he got in – either through the cat door or he’s been inside since the last time the door was left open.  Since he had some white underbelly I think he was a common King Snake which are very common here - he was about 6 feet.  I’m glad he is around as they are the mortal enemy of, and will kill, the also common-around-here Copperheads.  I just opened the garage door and he slithered on out into the driveway.

  1. OK, I have to confess that I expected your mouser to be Kitty. I'd have freaked out big time if there was a snake in my garage, and probably refused to ever leave the house again. Good think he came to visit you. Your grilled fish sandwich looks great. I sort of expected Kitty to be trying to share. Have a nice weekend, Larry.

  7. Great sandwich. I wouldn't be thrilled with a snake of that size in my garage but in the yard to eat other snakes, especially copperheads, I wouldn't mind that.

  10. Good grief, I'd be out of there if there was a snake!!! Your sandwich looks great, delicious! When I was a kid, we went to Ft. Lauderdale on vacation and went out fishing on a charter boat. My dad and uncle each caught a large grouper, we'd never heard of the fish; the "captain" said he'd get rid of them as they weren't edible, etc. Of course my dad,and everyone knew he sold them. Since then have eaten grouper and love it.
