Breakfast From Leftovers

I haven’t done one of these posts in a while but this one was too good to pass up.  Our friends, Dave and Laurie, brought us part of a box of portabella mushrooms and we had some cremini’s in the fridge so mushroom dishes were in order.

The first was a sausage mushroom quiche for breakfast using a recipe from Allrecipes and the second was stuffed mushrooms for supper using another recipe from Allrecipes.  I failed to get a shot of the quiche and the stuffed mushroom ones weren’t good enough to post, but both dishes were very good and I would make either of them again.


As it turned out, all of the egg mixture would not fit into the crust for the quiche and we didn’t have enough portabellas to use all of the stuffing mixture so a breakfast meal was born.  Bev added a couple more beaten eggs and combined the two leftover mixtures for a scramble.


While the photo may not show it, the scramble was delicious – how could it not be with mushrooms, spinach, pepperoni, sausage, and cheese.  While we are unlikely to have this very same mixture available again, we know they go together very well.  Next time we may make an omelet using the quiche ingredients for the egg part and the mushroom stuffing as such.

  2. Left-over mushrooms are fabulous the next day in scrambled eggs and we always "try" to save some for breakfast. Love the tomatoes and cottage cheese side too.

  3. I'm with Sam, I love cottage cheese combos as a side dish. And the egg/mushroom/allthingsdelicious combo sounds great.

  4. Larry, Glad you enjoyed the mushrooms... As you know mushrooms aren't part of my diet...but Laurie loves them. We grilled some whole caps with butter and garlic which made Laurie, her sister and brother-in-law very happy. Then the other day, Laurie sliced some of them up, slathered them with more butter and garlic and I hit them quickly on the grill. She was a happy camper! Take Care, Big Daddy Dave

  5. Everything sounded really good except for the cheese. Those are good looking tomatoes. Jim keeps trying to find some that actually taste like tomatoes.

  8. My compliments to the chef! I love mushrooms and eggs, what's not to like about them! On a hot summer night will even have a mushroom and egg omelette for dinner, mmm, with cheese of course!

  12. YUM... Delicious... I still think you need to publish a cookbook ---of what to do with left-overs.. That would make for a fantastic cookbook!!!!

  13. I think that combination of flavors in the scramble sound delicious! It paired nicely with the cottage cheese and tomatoes too.
