Fried Taters And Eggs, With A Twist

Before leaving for the Caribbean, Bev had boiled up a few pounds of small red potatoes and stored them in the fridge and when our neighbor showed up at our door with a dozen, fresh-from-the-hen eggs, I knew what had to be done.

When I was a kid, we came home from school for lunch and one of my favorite meals was fried potatoes and onions, either from raw or boiled potatoes (making them home fries).  The potatoes were often accompanied with a slice or two of Velveeta cheese and some bread-and-butter pickles for a pretty good meal.

My favorite meal for potatoes and onions is now breakfast and for this meal, to the potatoes, I added half of a large red onion, two green onions, and four julienned pieces of prosciutto that were left from another meal.



When they were about half done, I noticed the bag of mild Chamayo Pepper powder on the counter and sprinkled on about a teaspoon for a new twist on my usual.



I considered adding a big handful of shredded cheddar to the potatoes, but decided I could do without the calories – even though it would have kicked them up a notch or two.

This carton of eggs contained a variety of colors and sizes but they all had one thing in common – note how tall the yolk stands from the fresh eggs.



The potatoes were plated and topped with the eggs, but not the the green onion garnish that was still on the cutting board when I cleaned up the kitchen.  For me, the key to this meal is to not overcook the eggs so I have plenty of good yolk to get all over the potatoes when I mix them up together.



I suppose there is a meal I like better than this but right off hand, I can’t think of one and the ground pepper was a very good addition.

  1. Fresh from the hen, or yard eggs as they call them in the mountains, are the best! Their yolks are amazing and they always taste fresher and better to me than store-bought eggs. And what better way to have them is with home fries. Great breakfast Larry. It doesn't get any better than this.

  4. Fresh eggs like that are the bomb!! I had them a lot growing up... the eggs in the store just don't compare. This would be one of my top favorite meals too!! Can't wait to be done with my pregnancy so I can eat runny yolks again... I miss them so much!!!!

  7. I grew up eating fried potatoes and eggs. My dad could fix up a batch of home fries in his cast iron skillet like noone's business (smile). My mom did a pretty good job too. I could eat this meal all day everyday. I still fix up fried potatoes and eggs for dinner at or house too. I like the idea of teh bread adn butter pickles…I might pass on he Velveeta only becasue of the calories too (laugh).

  9. I love fried potatoes with onions. I don't use cheese but I throw in mushrooms sometimes. Add the eggs and muffin and I love it.

  12. My kind of breakfast Larry! I am with you - overcooking eggs is a HUGE no-no for me too. Yolk makes the best "gravy". It looks terrific and has me drooling.

  13. I've never noticed that the yolks stand tall with farm fresh eggs. And lucky you for getting some. Even though Highlands Ranch allows you to have 3 chickens in your back yard, they're still hard to find around the suburbs. I love that you used that Chamayo powder for this meal. Must try that soon. And I too spent a childhood with fried potatoes. From raw, Crisco, sliced thin = delicious.

  16. I'm a potato addict from way back and yours sounds great! I remember the days on our farm and going out to the hen house for eggs, the good old days! :-) You can't get much better than breakfast, it works 3 meals a day for me! And I love yours!
