2014 Florida Trip - Spinach Artichoke Chicken (Grilled)

When Mary from Barefeet In The Kitchen posted here recipe for Spinach Artichoke Chicken, I knew it had to be tried soon and it was a easy meal for the RV trip – please check Mary’s site for the original recipe and photos. 

I read the recipe and we bought the ingredients we needed, but I mis-read the recipe a couple of times so we adapted for that plus I had a desire to grill the chicken - we're camping you know.

Spinach Artichoke Chicken (Grilled) - Adapted from Barefeet In The Kitchen

Ingredients:
4 boneless skinless chicken breasts (not Dolly sized)
S & P to taste
Olive oil
1 13-14 ounce can quartered artichoke hearts, packed in water, drained *
20 ounces fresh spinach (recipe mis-read)
3 tablespoons finely minced yellow onion
2 clove garlic, minced
1/2 cup sour cream (I had mistakenly bought unusable orange yogurt for plain)
1/2 cup mayonnaise
1/2 cup Parmesan cheese, shredded
1/2 cup mozzarella cheese, shredded
Crushed red pepper, optional

Directions:
1. Preheat the oven to 375 and start the charcoal grill.  Spray a 10x10 baking dish with Pam.
2. Saute the spinach in olive oil – on the outdoor stove of course.
3. Cut the chicken in half lengthwise (didn’t need to do this with the breasts we had, but I read the recipe as cut into bite sized pieces and had it cut lengthwise when I re-read the recipe – so we got more grilled surface area). 
4. Rub the chicken with olive oil, salt and pepper each side, and toss on the grill.  Cook to an internal temp of 145 - 150*

5. While the chicken is grilling, combine all the remaining ingredients in a bowl and stir to combine.
6. Since I had cut the chicken in half, we assembled it in layers – chicken, topping, chicken, topping.



7. Bake in the oven until the chicken reaches an internal temp of 160*, 20-30  minutes.


8. Let rest 5 minutes before serving.  I added a little crushed red pepper to mine and will add it to the topping next time for a little heat.



We are fans of spinach artichoke dishes so this was a natural for us and I thought grilling the meat was a nice addition - we've already came up with an idea for a further adaption.  Thanks Mary for a fine meal.

  4. In my world, a recipe is to be followed, until I veer off course. A great recipe is a great starting point, and then we all adapt to suit our own peculiarities, right? This looks like a great recipe, Larry.
