Chicken And Soft-Boiled Egg - Almost

With all of the great looking fried chicken posts I’ve read lately, I’m almost embarrassed to post this, but only almost.  I actually like Bojangles chicken and I love their biscuits, even as leftovers, which we had after Bev and Madison brought home a box full the other night.

Bev had fixed a similar breakfast the previous day, but I wanted to do a couple of things differently, such as using my favorite part - the deep fried, crispy skin.  Bev omitted the skin, but I removed and chopped it then fried it a little to render some of the fat and re-crisp it.

The other change was to add eggs, but not my normal and easy fried eggs or even poached eggs, but rather the perfect soft boiled eggs as defined by Pam at For The Love Of Cooking.  I’ve cooked many soft boiled eggs in my life, but never paid enough attention to the detail to get the doneness just right every time, but the biggest difference is opening it. 

Just like my mom, after cooking, the egg was held over the dish, cracked with the side of a spoon, split in half and the white scooped out of each half - the yolk ran out.  Pam, on the other hand, peels hers, being careful not to puncture the white and thereby making a much prettier egg.  Check Pam’s site for specific directions and her beautiful presentation.

But I’ve digressed so back to this meal.  In addition to chopping the skin, I diced the meat and warmed it in the microwave along with the biscuit which was split and topped with a piece of cheddar cheese – while the eggs were cooled and peeled.  This what I ended up with.

As it turned out, the night before, Madison ate the chicken for a late supper.  Like the above, I often write up my food posts in advance as a guide to cooking the meal and this time it didn't quite work out - the silver lining was that Madison ate well - but I wish she'd at least left me the skin.  Oh well, I'm sure it would have been very good and it will be on the menu the next time but I'll secure a piece of chicken, as our fridge policy is first-come-first-serve unless it's labeled.

Fried Green Tomatoes - Since I've been eating fried green tomatoes as far back in life as I can remember, I was a little surprised by the number of commentors who had not eaten them.  I can imagine their flavor isn't for everyone, but I would encourage anyone to order up a few in a restaurant just in case they might be missing out.

  1. I would say it's a good thing Madison that ate the chicken, even if you had plans for it. There was a day when she didn't eat much of anything...

  2. See, this is why I don't have kids around the house... they eat everything good :) lol Seriously though, yes, at least Madison got to eat well and I'm with you.. I just know it would have been good. Love that you used the skin... that is absolutely, hands down my favorite part of fried chicken!

  3. I'm not much of a biscuit person but my hubby agrees with you on Bojangles' biscuits. Been a long while since we've been anywhere that has them though. I never thought about recrisping the skin. Well, usually there's not a lot of that left over for us. Some times I miss the fact that food has disappeared out of the fridge.

  4. Larry, Too bad about the chicken...and your breakfast. I like KFC better than Bojangle's although Bojangle's biscuits are indeed superior. I also like Popeye's Spicy Fried Chicken but it isn't any good left over... One reason that so many people haven't eaten fried green tomatoes is that until it's recent lurch into the 'hip' restaurants, you never saw them on a menu in the northern states. This is one damn Yankee that really likes good fried green tomatoes! Take Care, Big Daddy Dave

  5. I was just in Virginia in July and they had a Bojangles - yep, I agree - best biscuits! Sorry your breakfast biscuit didn't turn out - its sounds amazing!!

  6. We all have our guilty secrets, and Bojangles is not one about which you should be ashamed, although I prefer KFC. At least you're not admitting to liking some unidentifiable meat!

  7. My first job was at Kentucky Fried Chicken when I was a teenager. To this day, I have a soft spot for a 2-piece meal extra crispy ( there is some skin for your biscuit) with mashed potatoes, coleslaw and those delicious biscuits. Your post brought me home to that comfort meal.

    I have just discovered fried green tomatoes myself and I love them.

  8. I'm really deprived since I've never eaten Bojangles Chicken or Biscuits... Guess I need to try them sometime.... My Mother used to make the best soft-boiled eggs ---and I could never make them that good...

  9. I've never ever soft boiled an egg. I should learn how. We don't have Bojangles here in Colorado (that I know of). I have to admit I like the Colonel original. Even though I've not bought it for years. Funny with this post, I always scroll to look for the photo before reading the post ..... I should have known the outcome. You'll just have to buy more Bojangles cuz I want to see your creation. After you last post, I looked to see how I made fried green tomatoes last year and can't find what I did. All I remember is that I LOVED them.

  10. I'm back. I just searched your blog for Fried Green Tomatoes and found your post where you buttermilked them and served them with remoulade. I'm going to assume that's what I did last year and remake. Sounds like a great recipe.

  11. You are killing me with the fried skin... I do love it so but it has not passed my lips in more than 6 months now... guess it's time to cheat.... now I don't know about these folks who never had fried green tomatoes - can't imagine living in a place without 'em...

  12. Ha...sometimes things just don't work out. Wish I had a good place to buy fried chicken around here but no such luck. Somehow I missed the soft boiled egg tutorial on Pam's blog. I'll see if I can do it without making a huge mess.

  14. That is hilarious! I've had Brett do that to me when he lived in the house, devouring something I was going to use at 2 in the morning.

    But the idea of re-crisping the chicken skin, THAT is genius! I will steal that for making "cracklin's" as a salad toppper, egg topper, or anything else. Great idea, Larry.

    I just had Bojangles last Saturday, they are my second favorite fried chicken after Popeyes. Both are a mile ahead of KFC, IMO.
