The Last Of The Posole

It's so great to have my laptop back thanks to good buddy Joe.

So far I've gotten two posts (12/17 & 12/19) from the big pot of posole we made, but I couldn't pass up the opportunity to do one more.  A couple of weeks ago, Mary from Barefeet In The Kitchen posted about the Pork Carnitas Hash she made from her leftovers and an idea was born.

I made sure I saved enough of the posole, without liquid, to make into hash.  Since the last of our garden garden potatoes were sprouting badly, I fried up a big skillet full, using olive oil with a tablespoon of bacon grease - yum.  When they were about half done, I split them and added the posole to part of them and continued to cook until the potatoes were done. 

This is my serving of the hash with a sunny side up egg cooked in an egg ring.

Just as with the other dishes, the posole was delicious this way and I look forward to our next batch of it.

  1. So glad your laptop is fixed. It's like having an old friend back. Way to go Joe.

    I knew the moment I saw the word "hash" in the first paragraph that you would turn your posole into breakfast hash. And of course top it with a fried egg. As always Larry, a great breakfast at your house.

    Meakin and I are looking forward to knowing you guys better in the new year. I value our friendship and hope all y'all (that's the southern plural for y'all) at Almost Heaven South have a healthy and happy new year.

  3. I for one am sure glad you've got that laptop back. Life without a breakfast post from you just didn't seem right. :) I dropped my lap top last night and nearly had a heart attack. All is well. (and yes, there was wine involved)

    I made lasagna yesterday for my dinner party and Bev's egg method sure did make a difference in the dish. Thanks for that tip. I had to have some for breakfast just to make sure. Happy New Year Bev and Larry.

  4. Larry, Another great looking breakfast! A great way to help bring 2012 to an end... We had leftover cheesy scalloped potatoes with eggs and toast for breakfast this morning. Not as imaginative as your breakfast, but still tasty. Take Care, Big Daddy Dave

  7. I'm so glad you have your laptop back! I know how lost I was when my computer crashed a couple of years ago. Another wonderful way to use that posole!

  15. Hey Larry... So sorry it has been tooooo long since I visited. My blog list just got too long for me to manage. So naturally, I looked at it and just could not start since I knew I could not finish. One of my New year's resolutions was to simplify, so will be back whenever you post something new.

    Any word on Larry's BLOGfest '13? Too early to set dates? Jackie and I had such a good time, will be making that a priority.

  16. "Hash" is a super popular deal down here in S.C., always sold in restaurants and our local firefighters for funding several times a year. Darn good stuff, it is. And that egg on top is amazing. My brother, in the foodie biz, out West, is adding more fried egg on top recipes due to the amazing high demand. Great for us fried egg lovers!
