County Ribs, Kraut, And Mashed Potatoes

I was at the store the other day and they had country pork ribs on sale so I was ready for some pork and kraut.  If you’re not familiar with them, country ribs are just pork shoulder cut to look like a rib and sometimes they have a small bone in them – which these did.

I used the crockpot to cook a package of ribs with some of our homemade kraut.

We sided it with mashed potatoes using the recipe Penny, from Lake Lure Cottage Kitchen, used to top her French Shepherd’s Pie.

Everything was very good and the potatoes worked well as a stand alone dish.

  1. I cook these 'ribs' all the time and love 'em - esp the boneless ones when using a saucy finishing mop or gravy. Have not had a kraut dish in years, gonna have to change that.

  2. My friend Cauleen does shredded pork roast, sauerkraut and mashed potatoes every New Year's Day. And I have a crockpot recipe for these pork ribs, sauerkraut and apples .... and now seeing your post I'm suddenly very hungry for pork and mashed potatoes. Looks delicious Larry.

  4. I don't make my own sauerkraut but I sure do love to eat it with ribs and mashed potatoes. Your meal looks YUMMY!!

  5. I made an Irish dish last night - Colcannon which is mashed potatoes, onions and cabbage - so this was close! I will make it again and try to snap a photo before it gets eaten up. Loved it!

  9. Hey Big,Kate is traveling;so I am filling in(I always read your blog)Great meal!! Wow,I can almost get a whiff of the aroma.I had never had Kraut until marrying a German-American lady,and now I love it!
