Easter Breakfast and Next Day’s Leftovers

Since we were eating Easter dinner around 5pm, we knew it would just be a two meal day and for some reason Bev was up earlier than normal and whipped this little baby up for me – the green in the eggs is some of our spinach, lightly sautéed prior to adding the eggs.

Pretty good way to start the day I’d say.

We had plenty of food left from Easter dinner and I decided a nice tri-tip sandwich was in order for supper the next day. I sliced it thin enough to fold, and built a sandwich from a baggie of ready-to-go items I found in the fridge. I decided to go with a cold sandwich and leave off my normal cheese to end up with this – sided it with a couple of deviled eggs and a little orzo salad.

 Excellent sandwich and I can see why every Californian I’ve met through my BBQing has ask if I do tri-tip, as it is really good and I’m glad I have four more in the freezer.

  3. Larry, you are the sandwich king! and especially if you are grilling tri-tip. :) Generally unless you are from the west coast, most people do not know that cut of meat, our favorite.
    PS: beautiful blossoms and header photo. PSS: my fava beans are finally poking out of the ground

  4. I sometimes think your leftovers are better than other folks's feasts. That is some sandwich. The tri-tip is great but you must also try the flat-iron if it is available in your area. Have a great day, Larry. Blessings...Mary

  5. Oh my goodness you had tri-tip! Isn't is awesome? It is our favorite. The hubby says you must try the marinade that I posted last year. We have used "Ron's Marvelous Marinade" for years.

  9. You know I never had tri-tip before living in California and quickly fell in love with it. The sandwich looks good but mighty pickly. Sorry, but that made me laugh out loud to see that many pickles on one sandwich. :)
