Cajun Leftovers for Breakfast

We had some of everything and lots of some stuff left from our dock closing party and I thought a Cajun breakfast was in order. I decided on a shrimp po boy-like omelet for the main dish. I chopped some shrimp and tomatoes and sautéed them in one pan with a piece of chopped bacon I found in the fridge - couldn't help myself - and beat some eggs with Cajun seasoning and Tabasco for the other one. When the eggs had set, I added some cheddar cheese, the tomatoes and shrimp, folded and topped with some tarter sauce. I sided the omelet with some reheated red beans and rice with hot gator sausage - could only eat a few bites of them and still finish the omelet.

It didn't taste exactly like a po boy, but it was very good and I wish I had some more fried shrimp remaining.

  1. Larry, you serve the BEST breakfasts of anyone that I know of. What a great way to start a day with a shrimp po-boy style omelet. Yum, yum.

  2. Larry you know that breakfast food is my favorite food, but for some reason I can not eat seafood in the morning. Nonetheless, this looks like a fabulous little concoction. You've really got me craving some NO cuisine. I still haven't made that shrimp remoulade. Maybe this weekend.
