Another wonderful source of flavor from the chicken is the jelly that forms when pan juices from a roasted bird are refrigerated. To die for flavor! I bet it does enhance the flavor after reading the process. I'm sure those dogs went crazy over the treats! And if they don't have writters, who talks like that???<br /><br />Never heard the term of brown stock before, but I have raosted the bones when i have the time. For me, making stock is a 5 minute hands on project, while doing the roasting thing adds prep time that i usually don't want to do.
