Just find the spice blend you like (buy or make your own) and there are many sources - the big outdoor stores carry them, mix it up and smoke or freeze for fresh. I have an Italian one I like and I'm about out so I'll post when I make some. So far I do breakfast, Ital, and Czech. As for where to by, just go anywhere you're comfortable buying meat and they will grind it for you.
