Hibiscus and A Few Good Meals

Just like her mom, Bev cannot resist buying plants, even tropical ones, so when she saw this bright yellow Hibiscus, she had to bring it home.



I’ve been trying to get back to something besides my basic breakfast and here are a couple of them beginning with an open faced BLT with a good vine ripened tomato from the Mennonite market and a fried egg.


I grew up eating fried cornmeal mush and have always made my own but when I spied polenta on a recent market trip, I picked up my first tube.  It tasted like what I make but it is much drier and denser – seems to be made with a fine grind of cornmeal.  I fried six slices in a little bacon grease topped four of them with some chopped sausage then with a couple of fried eggs.




It made for a very tasty breakfast and I don’t know if I liked it more or less than the homemade version but it’s hard to beat the convenience.

Cindy likes to make supper and on this occasion she said she was craving a salad plate so she make egg salad, tuna salad, and chicken salad for us to eat on the dock after happy hour – we finally have the dock and boat cleaned up and open for the season.



All of her salads were very good and we sided them with some fresh local strawberries.  Then for dessert, it was a slice of lemon cake topped with strawberries and ice cream.  The meal was especially nice eaten on the dock with pleasant weather.

  1. I love the cornmeal patties I make them often but with sausage and tomato sauce like grandma made these would be great for breakfast I need to try it!

  2. Sounds like the perfect supper and perfect setting for dining. We hope to be hitting the road by the end of the week. I'll make a few different salads and pick up some freshly baked bread the day before travel and we'll enjoy some nice meals and not so nice long driving days. Quality food gets us through those long days on the road. Hope you got the pontoon in the water!

  3. Larry, Good to see your breakfast imagination back at work! Both breakfasts look great... I haven't had cornmeal mush in years but I"ll be looking for it in the store now. Even if Laurie doesn't like it, I can fry a bit up for me. Down on the dock...nice and great weather for it too. Laurie loves all 3 types of salad, especially egg salad and I do too (depending on the ingredients of course) Very attractive plate of food! Stay Safe and Take Care, Big Daddy Dave

  4. I love Cindy's idea of the "salad" smorgasbord. And I'm jealous of the tomato. The hibiscus is stunning. I most certainly would have brought that one home.

  5. Great breakfast, I grew up with homemade fried mush too and add cooked crumbled bacon or sausage to it sometimes. Fry it, smother it with butter and syrup, beats pancakes, etc any day in my book. The hibiscus is gorgeous, very pretty! I just picked up a couple of pots of dahlias yesterday. Like Bev, can't resist flowers!
