Breakfast Frittata


I’d been wanting this simple dish for several days and finally got out of my lazy mode and fixed it.  I used what we had on hand which was frozen cubes potatoes (Ore Ida), diced onion, chopped fresh asparagus (the thin spears), cooked country ham, diced cheddar cheese, parsley, S&P.

I cooked the potatoes and onions (covered) for until they started to brown, then added the asparagus and when it was crisp tender IO added the diced ham and gave it a couple of flips to get everything evenly distributed.  I turned the heat down to low, poured in two eggs that were beaten well with some half and half, covered, and cooked until eggs were set on top.

I slid it out onto the plate and added some fresh parsley.

About that time Bev walked in and advised it would be prettier with tomato on top and of course she was right. 

It was very good but I wish I’d thought of the tomatoes in time to cook them a little.  Of course more spices or a flavored hot sauce could have been added to amp it up a little.

  1. We love frittatas and it seems anything goes when you're putting them together. Fabulous for left-overs. Bev was right. The tomatoes are pretty on top.

  3. I am sure you are getting busy with your garden. Thanks for the links for the sausage making. I had a nice pork butt all ready to go and when I opened it, it was rotten- stupid Harris Teeter! So I will try again and let you know how it goes. I am excited to try different seasonings and see what I come up with.

  4. Larry, I've never made a frittata but this recipe, using onion flakes or powder rather than diced onions and adding Tabasco, sounds worth a try. Take Care, Big Daddy Dave

  5. Hey Larry, been out planting the last of our vegetables - we decided to plant them instead of annuals this year (even tomatoes which will stop producing mid June 'cause humidity) ... I already have several cherry ones dime size that I cannot wait to eat, thought of a salsa but now I'm thinking frittata - thanks for the comments on the BBQ chicken, I am a novice when it comes to you big time boys but have always loved grilling and barbecuing... now I ask a favor, if at anytime you read something that sounds odd or is just not right, please set me straight as I am learning everyday...
