Wilted Lettuce Salad and A Mojito

We are now picking fresh lettuce from the garden which means lots of salads. I’m growing a romaine, a butter crunch, and several leaf varieties. I plant individual lettuce plants then pick the outer leaves as they are ready – I just do a few pickings from those that make a head then leave them along to do there thing.

One of the salads we love, but only make a time or two per season, is wilted lettuce using a dressing of bacon grease, olive oil, vinegar, and a beaten egg. The veggies were plated and the hot dressing was poured over it to wilt the lettuce. Then it was topped with hard-boiled egg wedges, bacon crumbles (I took the shot pre-bacon), a drizzle of balsamic vinegar, and grated parmesan.

If you ever wondered how to turn a healthy salad into a pretty heart unhealthy meal, this is one good way, but it was oh so good.

Bev had bought a jug of Friday’s premixed mojitos but decided it needed something, so she muddled some fresh mint and added a few blueberries and raspberries. She said this was a definite improvement and it definitely made for a pretty drink.

  1. As long as I've got all those healthy greens, I'm not to worried about any dressing. If you have the time can you send me the specifics on the measurements for the dressing? Sounds wonderful.

    I didn't get my leaf lettuce seeds planted in time and sadly, I think it is too late as it warms up here in SC. I did get some head lettuce and red leaf lettuce plants in though. I like this salad and the dressing with the egg in it! Mmmm, perfect for spring!

    Thanks for your kind support this week and your comments on my garden. The iris weren't blooming last week and then suddenly they all just opened up on Monday! Weird! That's never happened, but it really has gotten warm in the 80s fast down here.

    I used to live in Maryville while I taught at U.T. and my daughter and husband still live in Knoxville. She wants me to come up and visit in June too! So I can try to visit you both!

    That salad looks delicious too and I envy that you are already picking from the garden. We can't even get our garden started yet.

  5. Hi Larry, I grew up eating wilted lettuce salads ALOT... We grew lettuce in the garden and Mom made it like you do--without the eggs though I think... LOVE it and haven't had one in years.

    Never heard of that drink... Guess I need to 'get with the program' huh?????? ha

  10. Yum, I've had a simular salad with curly endive . . . love it! I am finally getting my lettuce patch planted tomorrow. It's been cold and rainy this spring, but it's supposed to break a little. I am harvesting chives, parsely and thyme and have arugula popping up. Enjoy those fresh baby lettuce salads!
