Two Reuben Sausage Meals

I had fun making the Reuben sausage and now that I know how easy it was and what great product can be made, I may never buy sausage again. After the stuffing process, there was a little left in the stuffer tube and I immediately thought breakfast hash. I diced up a small Yukon gold potato and started it cooking covered to soften up some. Then I added the sausage and cooked it with the taters uncovered. When the hash was done, I added a couple of eggs – one pan meal today.

I sided it with a slice of toasted homemade bread for a delicious start to the day.

It could have used a little more of the sausage and, as usual, I forgot to pretty up the presentation. I think I need to devote equal amount of planning thought to the presentation as I do to the recipe.

I haven’t been eating much for lunch, but I had to have a sausage link this day.  I grilled it on the gasser over indirect heat to cook it through then moved it to indirect to develop a little crust.

I didn't have a bun so I just used a couple of slices of Bev's bread and turned it into a taste test opportunity.  the first fourth of the sausage got spicy mustard, the second Chez John's sweet potato hot sauce, the third received mustard and onion, and the last got all three.  Here it is without the second bread slice.

The conclusion - they were all good and next time I'll make sure we have some 1000 Island Dressing to try with it.

  6. YUM---both your breakfast meal and lunch look SO good... I am trying to diet --so my lunch consisted of some cottage cheese with fruit... Yours sounds better.... ha

  7. Now, Larry, if you pretty up your presentations any more, I'll start to feel like even more of a slacker. Then I'll have to go hide under the table with Thor. That won't be good, will it?

    No 1000 Island with Reuben sausage? The horror! Glad i'm not the only one who forgets to have things.

  10. Did you do any special tricks to keep the casing from splitting (poking it with a pin, etc) or just being careful with the indirect heat?
