Lobster – It’s What’s For Breakfast

Neither Wende nor I ate both of the lobsters from yesterday's seafood dinner, so I had two tails in the fridge still in search of a meal. And I’ll bet you knew I just could not pass up an egg meal from at least one of them.

My initial plan was for an omelet, but thought I would have too much filling and went with a scramble instead. I sautéed some onion and red sweet pepper then added the chopped lobster and some chives. I would normally use just olive oil, but for the lobster, I added a couple of teaspoons of butter. I’ve yet to master it, but have been using every opportunity to flip the skillet as a way of turning its contents. This way I can walk by with something in the one hand and still give the contents a quick turn.

When the lobster was warm, I added the beaten eggs and a little grated cheese. After plating, I topped with a little more cheese and chopped chives and sided with a slice of toasted Tellico Grains sourdough.

This was another one of those barely edible, but I managed to choke it down meals :-).  While Bev vacationed, I believe I did pretty well fending for myself.

Welcome new followers.  Bev got home day before yesterday from 10 days in the caribbean, nicely tanned and looking pretty hot for a sixty something woman, but she has continually fussed about the cool weather - guess it doesn't take long to change your acclimation - it feels pretty good to me.

  2. Larry, I think that scramble looks a lot more appetizing than "barely edible" to me. If you turned your back on me, it would be gone.

    Glad Bev had a nice vacation and returned tanned and rested.

  4. As far away as you live from a grocery store, I'm always amazed that you have these things on hand to whip up a leftover meal. I'm always running for a pepper or such. But that's probably because a grocery store is 5 minutes away. I'd probably be more organized if I could only go weekly. Barely edible..yeah right, I bet you had that thing gone in less than 5 minutes.

  10. Have you tried that exercise on Rouxbe using dried beans? It's a lot easier with dried beans than a skillet of different textures like this, lol.

    Lobster with eggs, reminds me of a certain Seinfeld episode!
