Brisket Burrito

In yesterdays comments, several folks called me the king of leftovers, I appreciate the kind words and I'm trying to get better at figuring out what goes with what - this is kind of my laboratory.  My leftover hero is Chez John over at Fat Johnny's Front Porch - as a retired executive chef, he puts together some amazing dishes from his leftovers.

One of the good parts about being a BBQer is the nice things I find when I go freezer diving – in this case it was some brisket. We’d already used it for a couple of simple meals but tonight, after a hard day of wood splitting and no lunch, I was ready for some serious eats. Bev made it while I rested my weary bones and came up with the meal – after I said I’d like a brisket burrito – remember she goes the extra mile.

She chopped and warmed the brisket and laid it on a flour tortilla along with some pepper jack cheese, picante sauce, and a few chopped jalapenos. After rolling, it was topped with venison chili, shredded cheddar and pepper jack, grape tomatoes, lettuce, green onion and jalapenos.

It was delicious and really hit the spot – actually, I was stuffed. If you ever wonder what going the extra mile looks like, compare the above photo with the one I made myself for breakfast yesterday.

TELL ME THIS WON'T HAPPEN TO US!!!

A little old lady was going up and down the halls in a nursing home. As she walked, she would flip up the hem of her nightgown and say “Supersex.”

She walked up to an elderly man in a wheelchair. Flipping her gown at him, she said, “Supersex.”

He sat silently for a moment or two and finally answered, “I'll take the soup.”

Have a great day and thanks for stopping by.

Larry

  10. Good joke! I like to go the extra mile for food, too. Left to his own devices, my dearly beloved will take cold leftover meat and wrap it in a tortilla. No cheese, no heating, no nothing. Poor dear! Well, at least I know he needs me!

Have a great weekend, Larry; I know you've got some great Superbowl eats up your sleeve!
