Leftover Grilled Ratatouille

Those of you that are regular readers of this blog will likely be highly surprised by this post, so....




Sided with toasted ciabatta garlic bread. Sorry about the blurry first photo.

I saw my shadow today so hopefully only 6 more weeks of bad weather - I'm ready for snow.

    Snow? Did you say snow? Go wash your mouth out man. It's too early for that word. The Bahamians have a saying, "Don't put mouth on it." The leaves haven't even turned yet, but I've noticed here the last couple of nights are beginning to get cooler. Maybe fall is on the way.

    You know I was complaining this past Winter as it appeared that Winter would never go away.....I am sorry that I complained as this Summer has been scorching and I am over it!

    I'm not ready for snow, yet, but I'm a little tired of this high heat (non-airconditioned) part of summer. Thank goodness we live by the lake and have a boat. :)

  9. Actually, why an I NOT surprised that you turned your leftover ratatouille into an omelet? I know you love eggs, and veggies are a perfect filler for an omelet.

  10. Your omelet looks perfect. What is this about not liking eggs? My quirky food problem is cheese. What?! You don't love cheese. i have heard it all of my life. I am getting over the dislike and love it melted on everything. Just not in a hunk. The heat is abating so maybe you don't have to wish for Winter yet.
